The aroma begins with a delicate, slightly smoky scent, reminiscent of a freshly extinguished match and wet limestone. This so-called reduction makes the wine appear particularly clear and cool. On the palate, it is firm, spicy, and slightly salty. Subtle notes of lemon balm, almond, and toasted bread accompany the long, fresh finish, without overpowering it.

This stony character comes from the massive shell limestone beneath the vines. Spontaneous fermentation in large wooden barrels and nine months on the lees give the wine depth, while maintaining its freshness and salty tension.
